सामग्री:
- 1 किलो चिकन, टुकड़ों में कटा हुआ
- 2 कप बासमती चावल
- 1 बड़ा प्याज, बारीक कटा हुआ
- 2 टमाटर, बारीक कटे हुए
- 2 कप दही
- 2 बड़े चम्मच अदरक-लहसुन का पेस्ट
- 1 छोटा चम्मच लाल मिर्च पाउडर
- 1 छोटा चम्मच हल्दी पाउडर
- 1 छोटा चम्मच गरम मसाला पाउडर
- 1 छोटा चम्मच जीरा पाउडर
- 1 छोटा चम्मच धनिया पाउडर
- नमक स्वादअनुसार
- 1 कप तेल
- 2 कप पानी
- 2 बड़े चम्मच घी
- 1 छोटा चम्मच केसर
- 1/4 कप दूध
- 2 बड़े चम्मच कटा हुआ धनिया
- 2 बड़े चम्मच कटा हुआ पुदीना
निर्देश:
एक बर्तन में पानी, नमक और तेल डालें। उबाल आने दें, चावल डालें और मिलाएँ। चावल को तब तक पकाएं जब तक कि यह लगभग 80% न हो जाए। छान कर अलग रख दें। एक पैन में तेल गर्म करें और उसमें कटी हुई प्याज डालें। सुनहरा भूरा होने तक तलें। अदरक-लहसुन का पेस्ट डालें और कुछ मिनिट तक भूनें। चिकन डालकर सफेद होने तक भूनें। टमाटर, दही, लाल मिर्च पाउडर, हल्दी पाउडर, गरम मसाला डालें पाउडर, जीरा पाउडर, धनिया पाउडर और नमक। अच्छी तरह मिलाएं।
चिकन के पकने तक पकाएं और तेल अलग होने लगे। एक अलग पैन में घी गर्म करें और उसमें केसर डालें। दूध डालें और अच्छी तरह मिलाएँ।
एक बड़े बर्तन में चिकन मसाला, चावल और केसर वाला दूध डालें। तब तक दोहराएं जब तक कि सभी सामग्री का उपयोग न हो जाए। बर्तन को ढककर धीमी आंच पर लगभग 10-15 मिनट तक पकाएं। कटे हुए सीताफल और पुदीने से गार्निश करें। गर्म - गर्म परोसें।
